Sugar and gluten-free Apple Pie

Always looking for new sugar-free and gluten-free recipes so you can enjoy a desert without the guilt that always seems to come with it? Do you agree with me?

This sugar and gluten-free pie I recently made is extremely easy to make, delicious, full of vitamins, minerals and healthy fats.

This crust I used can be used for other pies, such as pumpkin pie.

According to Wikipedia, the apple has a tonic, diuretic, laxative and antiseptic action, and it helps reduce the cholesterol. It is recommended for asthenia, pregnancy, anemia, rheumatism, hepatitis, low fever, insomnia, diabetes and other diseases. The expression “One apple a day keeps the doctor away” is therefore based on true facts.

To enjoy all the benefits of antioxidants, make sure you use Ceylon cinnamon, rather than cassia.

INGREDIENTS

  • 4 cups (950 g)  almond flour
  • 1/2 tsb salt
  • 4 tbsp coconut oil (organic preferably)
  • 2 eggs
  • 2 kg apples (Granny Smith, Gala, McIntosh) peeled, cored and grated
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 2 tbsp stevia/xylitol/maple syrup (optional)

DIRECTIONS

1. The crust: Mix in the almond flour, salt, coconut oil and the eggs, by hand, till you       obtain a brittle, “crumby”dough. Optional you may add a bit of stevia, to make it sweeter. Divide the dough in 2: a bigger and a slightly smaller one (for the top crust). Roll the dough on a flourec surface and place it in a 9 inch baking pan. Make a few holes with a fork. Don’t get discouraged if the crust is brittle. Press it with your fingers to make it stick together.
2.  Drain the apples to remove all excess water. Add the spices (cinnamon, nutmeg and cloves) and optional stevia / xylitol / maple syrup. Mix them well and place the mixture on the crust. Add the top crust (lattice work crust).
3. Bake 15 minutes at 425 degrees F (220 degrees C). Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 45 minutes.
Let it rest 20-30 min before you cut it.
